one way to know if it is time to flip the pancakes is that the bubbles around the edges will stay open, they will pop and not fill back up with batter.

also, a few notes...

we have nutella here in the US and people love it. it is a fairly common thing for people to eat, you can buy it in most supermarkets;)

also, maple syrup (real maple syrup made from maple trees, not corn syrup with flavoring) is very expensive here as well. it can only be made for a few weeks out of the year in early spring, when the sap flows, and sugar maples only grow in a limited region of the northeast US and Canada. it is also very labor-consuming to make, since you must boil many gallons of sap to make a very small amount of syrup...that's why it tastes so good!

As a child, I've made the cake several times in class, usually by the end of the year. The teacher would bring in all the ingredients in the morning, the whole class participated in making the cake, then it was put away in the school's fridges, and in the afternoon we all got a yummie dessert!! It was also the alltime favourite birthday cake. To add drama, we got it sometimes in "castle" form, with walls and towers and all. In Belgium we called it "petit beurre cake" or "Chinese wall" or simply "butter and cookie cake".
